I have two plants in the veg stage, Do si dos strain, and feminized. Both were planted at the same time and are about 1 month and 1/2 old and about 8 inches tall. My plants are indoor and get about 6 hours of sun before going under LED lights for rest of the day. They are in 5 gal fabric pots.
I pinched the tops on both of them and as a result one plant only has 3 leaves where there should be five. The other plant has 5 leaves but noticed that some of the new leaves forming are a lighter green color. The medium that it's in is a mixture of Fox Farms' Strawberry Fields (bottom layer), Happy Frog and Ocean Forest mixed together with lots of perlite. Did I screw up by pinching the tops off? Are my plants useless? Can they still recover?

I think your girls look great and you can see where two new tops are starting to form on each one. That's what you want to see.
They are still a little small but that's not a problem. Since they are still small and I can see a little bit of tip burn I would suggest you hold off on adding nutrients for a few more weeks and stick with just water and add in some CalMag for the Calcium. Most importantly, make sure the PH of your feed is in the 6.5 to 7.0 range. ⚠️
I am not sure if CalMag is considered 'Organic', but it is probably too late to add in Gypsum or egg shells (I think I have that right .. maybe?). As for other organic feeds, I have dabbled in top dressings like Gia Green but there are far more informed folks here on the forum when it comes to organics.
There are lots of posts here about Organic growing with some great information you should check out. Also look into doing some LST (Low Stress Training) to maximize yield.

Feminized seeds can go hermie on you if stressed or the genetics are bad.
Topping shouldn't cause any issues so I wouldn't worry about that.
Your girls sound hungry and have probably used up all the good stuff in the soil. You should start feeding them some nutrients.
Moving them around from sun (through a window I assume) to LED might be stressing them a bit. You should keep your plants under the LED only.
Are these plants Photo Periods or Autos?
Your plants can probably recover, but some pictures would be helpful.
