also, I didn’t think to ask… what happens when you water post diatomaceous earth application? Does it need to be reapplied? Is it harmful to the roots after being watered through?

Fungus knats chill out at the top of the soil so no water needed. Especially considering that overwatering is one of the primary things that lead to fungus gnats. Let her dry out and she should turn around.
The drooping plant probably just needs a transplant into a larger container. Once they become root bound, they can become unhappy like that. You shouldn't have to reapply it, although, someone else with more experience using diatomaceous earth may be able to chime in with more details.
