I think I might have been a bit eager to put my Amnesia Haze into it's jars to cure. It's been in there a week and it smells great, the buds are sticky and not easily able to be ground up in a grinder.
Did I not dry them for long enough? Is this strain supposed to be "chewy" in consistency?
I've emptied the jar onto a drying rack and put it in a warm dark place now anyway. Hope I've not spoiled it.

A week in the jars is not really a lot of time. You can give it a test after a week, but I have found you need at least two weeks before it is even close to smokable, 4 weeks is better.
40% RH is low, you should be aiming for the 55-62% range, so you might want to throw some humidity packs into your jars.
Just keep burping your jars for another week and I'm sure those buds will start to look and feel better. It's amazing the difference and extra week or two of curing can make.
