So, my plant is 3 weeks old today. The conditions are 24°C when Lights are off, and 27°C when the lights are on at the very high end. The RH is 60%. My light is a SF1000 SpiderFarmer LED light that is 30” away from the top of the plant running about 80% of power. What do you think could be wrong?

If you are growing hydro I assume there was no stunting from overwatering. The leaf discoloration and morphology look to me like a genetic mutation. Just a guess!
Sorry Dude, I don't have any experience with hydroponics so not sure what to tell you. Hopefully someone else with more experience in this area can help you out.

I’m growing her in a rockwool cube that I placed in a hydroponic setup with Hydroton Clay pellets. I adjusted the fan 7 days ago but the new growth still looks strange. I’m feeding weekly with Advanced Nutrients (PH Perfect line). After the feeding, she booms but the new growth still doesn’t look the best.
Hi, your environment sounds fine. What are you feeding her and what are you growing her in? Any fans blowing right on it, I've seen wind burn do strange things to leaves.
