Fantastic looking plants! I defol the lowest leaves in veg if low enough to be getting in the soil and they usually turn yellow from being low and not really exposed to the light- about when to defol in general, I have success from what Chris said in his book- or in a video from his channel. He did day F7, F14 and F21, nothing usually after F21- lower leaves less important than uppers by the larger colas
Your topping technique is Wu-Tan level.

yhats why it’s important to consider what leaves your trimming to expose the lower canopy. I’d you trim the top cola of all its fan leaves it wont join up with lower and upper buds... if that makes sense
These are happening everywhere!
Day 14 since the 12/12 flip, it's just so cool to have come this far with them.

At this stage in flower I would NOT hesitate to trim up that lower layer but you have done a good job training so everything is already pretty good.
Different angles, 2 plants. Do these need any thinning at this time or should I just "leave" them alone to progress further into flower?
The other one:
Fan leaves fuel cellular growth associated with the node immediately following or preceding. Your plants look great by the way!! Hell yeah!!
