If I use RO water and immediately water my plants, should the pH be sufficient? When I try to pH it, I cannot get a good reading for some reason.

Ph of ro water is generally around 6.7-6.8 in my experience. Pure ro water can destroy your ph meter. Always add nutrients first then ph. If you are using it to water an organic grow then don't ph it.
