I'm well into trimming on my first grow and rather enjoy it without expecting great things from it. Anyway, last night I was reading an article on "Drying & Curing". The writer said that he trims off the fan leaves but leaves the sugar leaves on. I always thought that trimming involved taking all leaves off that are accessible without damaging the bud. Did I get it wrong to start with or is it just another personal / optional choice?

It's more of a time and personal preference thing.
There is nothing wrong with curing bud with sugar leaf left on. Just means you will be breaking off the sugar leaves as you use the buds. I would suspect that the more leaf you leave on, the longer the cure will take, but it may be slightly nicer in the end.
I like to be a perfectionist, but it sure makes for a long a trim day and wow, does my right back shoulder area ever hurt when I am done from all the repetitive strain after trimming for hours. I have done a quick trim before due to time constraints and left a lot of the sugar leaf on, everything was fine but a little more messy when I went to use the buds.
