Your plants look great! Defoliating is optional. It's definitely more of an intermediate/advanced technique so it's not included in my book for beginners. Looking at your plants, i'd wait until day 14 or 21 and then defoliate it.
First off, im missing 4 plants, those them? Those are beauties. No it really looks familiar. Nice job. The cannabis Bible says its best just before your light cycle change, or the first couple weeks into flower.(that why I just did mine, 10 day into flower.) Doing this now gives the plant most of its energy to creating us, me, you big buds. Trimming to late will affect your yield. Mr.Growit's book(7 steps to grow cannabis 3rd edition) is more than helpful in the success of growing nice cannabis plants. But in doing this it's like he says "completely optional".
