Hey read your book cover to cover very organized and detailed. I just have 1 question as far as RO water can you make that without the countertop/under the counter machine ? And what do you think of bottles water with a decent ph in it ex: Fiji, Smart water, Evian, Essentia etc.

Bottled water is very expensive so I don't recommended that. In many areas, RO water is available for purchase at water stations and/or grocery stores. Not sure if they are available in your area but there was a time I would fill up several 3 and 5-gal containers that way. You could always try to let your tap water sit out for 24-48 hours then use it. Letting it sit will allow the chlorine to dissipate.
